- 4 boneless, skinless chicken breasts
- 4 slices of turkey ham or beef ham
- 4 slices of Swiss cheese
- 1 cup of Italian-seasoned breadcrumbs
- 1/2 cup of all-purpose flour
- 2 large eggs
- 1 teaspoon of garlic powder
- 1 teaspoon of paprika
- Salt and pepper, to taste
- Cooking oil, for frying
- Optional: fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound them gently to about 1/2 inch thickness.
- Season both sides of the chicken breasts with salt, pepper, garlic powder, and paprika.
- Lay a slice of turkey ham and a slice of Swiss cheese on each chicken breast.
- Roll up each chicken breast tightly and secure with toothpicks.
- Set up a breading station with flour, beaten eggs, and breadcrumbs.
- Dip each chicken breast in the flour, then the egg mixture, and finally in the breadcrumbs.
- Heat about 1/2 inch of cooking oil in a large skillet over medium heat and add chicken; cook until golden brown (about 5 minutes per side).
- Transfer chicken rolls to a greased baking dish and bake for 15-20 minutes or until cooked through (internal temp of 165°F).
- Let the chicken rest for a few minutes before removing toothpicks and serving.
Notes
For a healthier version, consider whole-grain breadcrumbs, low-fat cheese, or baking instead of frying.
