Description

Ingredients

  • 8 ounces rotini or penne pasta
  • 2 cups cooked chicken breast, chopped or shredded
  • 4 cups romaine lettuce, chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup Caesar dressing
  • ½ cup grated Parmesan cheese
  • ¼ cup croutons (optional)
  • Salt and pepper to taste

Instructions

  1. Begin by cooking your pasta according to the package instructions. Add a pinch of salt to the boiling water. Once cooked, drain and rinse under cold water.
  2. In a large bowl, combine the cooled pasta and the chopped or shredded chicken. Stir gently to mix them well.
  3. Next, add the chopped romaine lettuce and halved cherry tomatoes to the bowl.
  4. Drizzle the Caesar dressing over the salad and toss everything together until well coated.
  5. Finally, sprinkle grated Parmesan cheese on top, adding salt and pepper to taste. For an extra crunch, toss in some croutons right before serving.

Notes

For a vegetarian version, substitute chicken with chickpeas or tofu. Use whole wheat or gluten-free pasta for healthier options.
