- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cubed
- 3/4 cup buttermilk
- 1 cup fresh blueberries
- 1 teaspoon vanilla extract (optional)
- Additional sugar for sprinkling (optional)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Combine the flour, baking powder, baking soda, salt, and sugar in a large mixing bowl and whisk until well mixed.
- Add the cubed, chilled butter to the flour mixture and cut it in until it resembles coarse crumbs.
- Make a well in the center of the dry ingredients, pour in the buttermilk and vanilla extract, and stir gently with a fork.
- Fold in the blueberries gently, taking care not to crush them.
- Turn the dough onto a floured surface and pat into a rectangle about 1 inch thick. Cut into squares or use a biscuit cutter.
- Sprinkle sugar on top of each biscuit if desired.
- Bake for 15-20 minutes or until golden brown and fragrant.
- Allow to cool slightly before serving.
Notes
For healthier options, consider using Greek yogurt as a buttermilk substitute or almond flour for a lower-carb version.
