Ingredients

- 2 pounds boneless, skinless chicken thighs or breasts
- 1 cup of your favorite barbecue sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika (optional)
- Salt and pepper to taste
- Optional: sliced onions and bell peppers
Instructions
- Trim any excess fat from the chicken and season with salt, pepper, garlic powder, onion powder, and smoked paprika.
- Place the seasoned chicken in your crockpot and layer with sliced onions and bell peppers if using.
- Mix together the barbecue sauce, apple cider vinegar, and Worcestershire sauce in a bowl. Pour over the chicken.
- Cover the crockpot and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Check the chicken at the end of cooking time; it should shred easily with a fork.
- Shred the chicken in the crockpot and toss it in the sauce.
Notes
For a vegetarian option, replace chicken with jackfruit. Store leftovers in an airtight container for up to 4 days in the fridge or freeze for 2 to 3 months.
