- 2 medium zucchinis, sliced into rounds
- 1 cup breadcrumbs (Italian seasoned or plain)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 large egg
- Olive oil spray (or use olive oil for brushing)
- Fresh basil, for garnish (optional)
Instructions
- Start by prepping your zucchinis. Wash them thoroughly and slice them into rounds about half an inch thick.
- In a large mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- In another bowl, beat the egg until it’s mixed well.
- Dip each zucchini slice in the egg, ensuring it’s well-coated.
- Preheat your air fryer to about 400°F (200°C).
- Lightly spray the air fryer basket with olive oil to prevent sticking.
- Cook the zucchini for about 10 to 15 minutes, flipping them halfway through.
- Once they’re done, remove them from the air fryer and, if you wish, sprinkle with fresh basil for added flavor.
Notes
Serve with marinara sauce for dipping or a fresh salad for a balanced meal. Avoid overcrowding the air fryer for crispier zucchini.
