Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 2 cups chow mein noodles
  • 1 cup chocolate chips (semi-sweet or milk chocolate)
  • 1/2 cup mini M&M’s or jelly beans (for decoration)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine the peanut butter, granulated sugar, and egg in a mixing bowl. Stir in the vanilla extract and pinch of salt until smooth.
  3. Fold in the chow mein noodles, ensuring they are fully coated.
  4. Drop spoonfuls of the mixture onto your prepared baking sheet, spaced about 1 to 2 inches apart.
  5. Bake for around 10 minutes or until golden, being careful not to overbake.
  6. Allow the cookies to sit on the baking sheet for about 5 minutes, then create a small well in the center of each cookie.
  7. Cool the cookies fully on a wire rack and fill the nests with mini M&M’s or jelly beans.

Notes

For nut-free, use sunflower seed butter. For lower sugar, try natural sweeteners like honey or maple syrup.
