Description

A crowd-pleasing combination of seasoned ground beef, crisp lettuce, fresh vegetables, cheese, and crunchy Doritos chips that creates the perfect potluck dish or family dinner.


Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 large head romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup ranch dressing
  • 1 large bag (9.25 oz) Nacho Cheese Doritos
  • 1 can (6 oz) black olives, sliced
  • 4–5 stalks green onions, sliced
  • 1 small red onion, diced
  • 1 cup salsa

Instructions

  1. 1. Heat a large skillet over medium-high heat and cook ground beef for 8 minutes, breaking it apart until no pink remains. Drain excess fat.
  2. 2. Add taco seasoning to the beef according to package directions, typically with water. Simmer until liquid reduces and flavors concentrate, about 3-5 minutes. Let cool slightly.
  3. 3. Wash and thoroughly dry romaine lettuce, then chop into bite-sized pieces. Halve cherry tomatoes and slice green onions.
  4. 4. In a large serving bowl, layer half the lettuce, followed by half the seasoned beef, cheese, tomatoes, onions, and olives.
  5. 5. Repeat layers with remaining ingredients except Doritos.
  6. 6. In a small bowl, mix ranch dressing with sour cream and salsa to create the dressing.
  7. 7. Just before serving, crush Doritos and sprinkle over the top of the salad. Drizzle with dressing or serve dressing on the side.
  8. 8. Toss everything together gently and serve immediately for maximum crunchiness.

Notes

For best results, keep Doritos separate until serving time to maintain crunch. Store leftover components separately in airtight containers for up to 2 days. This salad works great as a build-your-own bar for parties. Can substitute ground turkey, chicken, or black beans for the beef.
