- 1 lb ground turkey or chicken (or beef)
- 1 cup cooked rice (white, brown, or cauliflower rice)
- 1 cup black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh herbs (cilantro or parsley) for garnish (optional)
- Sliced jalapeños for a spicy kick (optional)
- Sour cream or Greek yogurt for drizzling (optional)
Instructions
- Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
- Heat olive oil in a skillet over medium heat. Add onions and garlic, sauté until fragrant.
- Add ground turkey or chicken, breaking it up as it cooks. Stir in chili powder, cumin, salt, and pepper. Mix in rice, black beans, and diced tomatoes; simmer for 5-10 minutes.
- Fill each bell pepper with the mixture, pressing down gently, and top with cheese.
- Arrange the stuffed peppers in a baking dish, cover with foil, and bake for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes until cheese is melted and bubbly.
Notes
Serve with a side salad or garlic bread. Consider garnishing with fresh herbs for enhanced flavor.
