  • 1 inch ginger, grated
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (optional)
  • 3 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Optional: steamed vegetables (like broccoli or snap peas)

Instructions

  1. Begin by rinsing the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions and keep it warm while preparing the chicken.
  2. While the rice cooks, cut the chicken thighs into bite-sized pieces. In a bowl, mix the soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper to create a marinade. Toss the chicken pieces in this mixture and let marinate for at least 15 minutes.
  3. Heat a non-stick skillet over medium-high heat. Add the marinated chicken (including the marinade) and cook for about 5-7 minutes, stirring frequently for even cooking. If using cornstarch, sprinkle it now to thicken the sauce.
  4. Once the chicken is cooked through and coated in glaze, remove it from the heat. If adding steamed vegetables, toss them in the skillet for 1-2 minutes to warm them up.
  5. To assemble your bowls, place a generous scoop of rice at the bottom, followed by the sticky chicken and vegetables. Drizzle any remaining sauce over the top.
  6. Finish with a sprinkle of chopped green onions and sesame seeds for added crunch and visual appeal.

Notes

For dietary preferences, swap chicken with tofu or tempeh. Use maple syrup instead of honey for a vegan option. Cauliflower rice can be used for a low-carb alternative.
