This recipe combines the classic flavors of Caesar salad with juicy, tender chicken, perfect for weeknight dinners or impressing guests.

- 4 boneless, skinless chicken breasts
- 1 cup Caesar dressing (store-bought or homemade)
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (panko works best for extra crunch)
- 2 cups Romaine lettuce, chopped
- Salt and pepper, to taste
- Olive oil, for cooking
- Optional: Cherry tomatoes, croutons, and lemon wedges for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Place the chicken breasts in a large bowl and coat them generously with the Caesar dressing.
- Combine the breadcrumbs and half of the Parmesan cheese on a separate plate.
- Dredge each piece of chicken in the breadcrumb mixture and press down slightly to help the crumbs adhere.
- Heat a large oven-safe skillet over medium-high heat and add olive oil. Sear the chicken for about 3-4 minutes on each side until golden brown.
- Sprinkle the remaining Parmesan cheese over the chicken, then transfer the skillet to the preheated oven to bake for 20-25 minutes or until cooked through.
- Prepare the chopped Romaine lettuce, tossing it with additional Caesar dressing and optional ingredients.
- Remove the chicken from the oven and let it rest for a few minutes.
- Plate the dressed Romaine and top with sliced Caesar chicken; garnish with lemon wedges.
Notes
For a lighter option, use Greek yogurt instead of some or all of the Caesar dressing. This dish can be made ahead by marinating the chicken the night before.
