- 1 cup uncooked rice or quinoa
- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, drained, and rinsed)
- 1 bell pepper, diced
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- Chopped cilantro or parsley for garnish
- ½ cup shredded cheese (optional)
- 1 lime, cut into wedges
- Olive oil for cooking the chicken
Instructions
- Start by preparing your rice or quinoa. Cook according to package instructions.
- While the rice cooks, heat a large skillet over medium heat and add olive oil. Season the chicken with salt and pepper and add it to the skillet. Cook for about 6-7 minutes per side.
- Once the chicken is cooked, toss it in BBQ sauce until well-coated and let it simmer for a few minutes.
- Prepare your vegetables by combining corn, black beans, diced bell pepper, and cherry tomatoes in a separate bowl.
- When the rice or quinoa is done, add it to each bowl as the base.
- Next, slice the BBQ chicken and layer it over the rice.
- Top with the fresh veggie mix, sliced avocado, and cheese if using.
- Garnish with fresh herbs and serve warm.
