Ingredients

  • 1 package (16 oz) frozen pierogies (potato and cheese or your preferred variety)
  • 1 lb kielbasa (or any preferred sausage alternative)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar works great)
  • 1 cup sour cream
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Start by dicing the onion and mincing the garlic. These base ingredients add a fantastic depth of flavor, so don’t rush this step. You can also prep the kielbasa by slicing it into bite-sized pieces for even cooking.
  2. In your crockpot, combine the cream of mushroom soup and chicken broth. This creamy mixture is the base of the dish, so stir it well to ensure everything’s combined. Season it with salt and pepper to your taste.
  3. Layer half of the frozen pierogies in the bottom of the crockpot, followed by half of the sliced kielbasa, half of the onion, and half of the minced garlic.
  4. Pour half of the creamy soup mixture over the layers, and sprinkle a little cheese on top for that melty goodness. Then repeat the layers with the remaining ingredients.
  5. Finally, cover the crockpot and set it on low for 240 to 360 minutes, or high for about 120 to 180 minutes. The longer you cook, the creamier it gets, so choose what fits your schedule!
  6. About 15 minutes before serving, stir in the sour cream and the remaining cheese, allowing it to melt and blend into the casserole for that rich flavor.

Notes

For a healthier option, use whole-wheat pierogies or Greek yogurt instead of sour cream. Avoid overcooking the pierogies for the best texture.
