- 4 boneless, skinless chicken breasts
- 1 cup of chicken broth
- 1 cup of heavy cream
- 1 cup of sun-dried tomatoes (chopped)
- 4 cloves of garlic (minced)
- 1 teaspoon Italian seasoning
- ½ teaspoon of red pepper flakes (adjust to taste)
- Salt and pepper (to taste)
- 8 ounces of pasta (such as penne or rotini)
- 1 cup of spinach (fresh or frozen)
- ½ cup of grated Parmesan cheese
- 2 tablespoons of olive oil
Instructions
- Start by preparing your chicken. Trim off any excess fat and season with salt and pepper.
- Add the chicken breasts to your slow cooker along with chicken broth, heavy cream, sun-dried tomatoes, minced garlic, Italian seasoning, and red pepper flakes. Mix gently.
- Cover the slow cooker and set it to low for 4 to 6 hours or high for 2 to 3 hours.
- When the chicken is tender, remove it from the pot and shred it with two forks.
- Stir in the shredded chicken, spinach, and pasta into the slow cooker, followed by the grated Parmesan cheese. Adjust sauce consistency as needed.
- Cover and cook for another 30 minutes on low for the pasta to absorb the sauce.
Notes
Substitute chicken for turkey or tofu for a vegetarian version. Use gluten-free pasta for dietary needs. Dish stores well for up to 3 days in the fridge or can be frozen for up to 3 months.
