Description

A simple and flavorful crockpot recipe that combines chicken, honey, and garlic for a delicious weeknight meal.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs
  • ½ cup honey
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper (to taste)
  • Green onions (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Start by prepping your ingredients. In a small bowl, combine the honey, soy sauce, minced garlic, grated ginger, apple cider vinegar, and sesame oil. Stir until well-mixed.
  2. Grease the crockpot with cooking spray or olive oil. Place the chicken thighs inside.
  3. Pour the honey garlic sauce over the chicken, ensuring each piece is coated. Sprinkle with salt and pepper.
  4. Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
  5. When the timer goes off, carefully remove the chicken and shred it with two forks, mixing it with the sauce.
  6. To serve, sprinkle with chopped green onions and sesame seeds, and enjoy over rice or with steamed veggies.

Notes

For a healthier option, use low-sodium soy sauce and add vegetables for extra nutrients. Store leftovers in an airtight container.
