- 1 lb ground beef or turkey (or beef sausage)
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups Yukon Gold potatoes, cubed
- 1 cup frozen corn
- 1 cup zucchini, diced
- 1 can (15 oz) diced tomatoes (with juice)
- 3 cups beef broth (or vegetable broth)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: 1 cup green beans or peas
- Optional: Fresh parsley for garnish
Instructions
- Begin by browning your ground beef or turkey in a skillet over medium heat for about 5-7 minutes. Once browned, drain any excess fat and place the meat into your crock pot.
- Add the chopped onion, diced carrots, celery, cubed potatoes, frozen corn, and zucchini into the pot. Toss in your can of diced tomatoes along with their juice.
- Pour in the beef or vegetable broth. Then, add Worcestershire sauce, garlic powder, onion powder, dried oregano, salt, and pepper. Give everything a good stir.
- Cover the crock pot with the lid and set it to low for 6 to 8 hours or high for 3 to 4 hours.
- Taste the stew about 30 minutes before serving. Adjust seasoning or add more broth as necessary.
- Once done, ladle your stew into bowls, topping each with fresh parsley if desired.
