- 4 chicken thighs (bone-in, skin-on)
- 4 tablespoons unsalted butter
- 4 cloves garlic (fresh, minced)
- 1/4 cup lemon juice (freshly squeezed)
- 1 teaspoon lemon zest
- 1 cup chicken broth
- 1/4 cup fresh parsley (chopped, for garnish)
- Salt and pepper (to taste)
Instructions
- Pat the chicken thighs dry with paper towels and season generously with salt and pepper.
- Melt the unsalted butter in a skillet over medium heat, then add minced garlic and sauté for about a minute until fragrant.
- Add the lemon juice and zest to the skillet, stirring to combine.
- Pour the garlic butter mixture into the crock pot and arrange the chicken thighs skin-side up inside.
- Add the chicken broth around the thighs, ensuring not to wash off the butter and garlic mixture.
- Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
- Remove the chicken from the crock pot and place it on a serving platter. Drizzle with remaining sauce and sprinkle with chopped parsley.
Notes
For added flavor, consider browning the chicken thighs before placing them in the crock pot. This enhances the dish greatly.
