Ingredients

  • 2 pounds beef chuck or brisket, cut into cubes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups egg noodles
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Begin by prepping your beef. Cut the chuck or brisket into bite-sized cubes.
  2. In your crock pot, layer the onion and garlic. Spread the beef cubes on top.
  3. Add herbs and seasonings—thyme, black pepper, salt, soy sauce, and Worcestershire sauce.
  4. Pour in the beef broth and ensure all ingredients are submerged.
  5. Cover the crock pot and set it to cook on low for 360-480 minutes, or on high for 240-300 minutes.
  6. About 30 minutes before serving, add the egg noodles to the pot.
  7. Once everything is cooked, give it a good stir, taste, and adjust the seasoning if necessary.

Notes

For a lighter version, consider chicken or turkey. Add veggies like carrots or peas for nutrition.
