  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning

Instructions

  1. Start by preparing the chicken. Place each chicken breast between two pieces of plastic wrap and pound them to about half an inch thick. Season both sides liberally with salt and pepper.
  2. Set up your dredging station. In one bowl, add the flour seasoned with a pinch of salt and pepper. In another bowl, whisk the eggs until smooth. In a third bowl, combine the breadcrumbs, Parmesan cheese, and Italian seasoning.
  3. Dip each piece of chicken first into the flour mixture, ensuring it’s evenly coated. Shake off any excess. Next, immerse the chicken in the egg mixture, letting it drip before moving to the breadcrumb mixture. Press the breadcrumbs onto the chicken to adhere well for that extra crunch.
  4. Heat a generous amount of olive oil in a large skillet over medium-high heat. Make sure the oil is hot before adding the chicken to achieve that beautiful, golden crust.
  5. Carefully place the breaded chicken cutlets in the skillet, making sure not to crowd the pan. Cook for about 4-5 minutes on each side or until they achieve that irresistible golden brown color.
  6. Once cooked, transfer the cutlets to a paper towel-lined plate to absorb any excess oil.
