Ingredients

  • 4 large eggs
  • 4 flour tortillas (10-inch size)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite blend)
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, finely chopped
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste
  • Optional: chopped cilantro, avocado slices, salsa, or hot sauce for serving

Instructions

  1. Start by heating the olive oil or butter in a large skillet over medium heat. Once hot, add the diced bell peppers and onions to the skillet. Sauté them for about 3-5 minutes, until they are soft and fragrant.
  2. While the veggies are cooking, crack the eggs into a bowl. Add a pinch of salt and pepper, then whisk them until well mixed. Once your veggies are ready, pour the beaten eggs over the sautéed mixture in the skillet. Cook the eggs gently, stirring occasionally, until they are just set.
  3. Now, it’s time to assemble! Place a tortilla in the skillet (you may want to keep the heat on low to prevent burning). Sprinkle a layer of cheese over half of the tortilla. Add a generous scoop of the egg and veggie mixture on top of the cheese. Top with another layer of cheese and fold the tortilla in half to cover the filling.
  4. Cook the quesadilla for about 3-4 minutes on one side, until it’s golden and crispy. Carefully flip it over and cook for another 3-4 minutes, until the other side is just as crispy and the cheese is melted.
  5. Remove the quesadilla from the skillet. Let it cool for a minute before slicing it into wedges. Serve it with your choice of toppings like avocado slices, salsa, or chopped cilantro.
