A healthier baked alternative to classic fried chicken parmesan, featuring crispy chicken breasts topped with marinara sauce and melted cheese.

- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs (preferably panko)
- ½ cup grated Parmesan cheese
- 1 cup marinara sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a shallow bowl, crack the eggs and beat them lightly. In a separate bowl, combine the panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Take each chicken breast, dip it into the egg wash, then coat it with the breadcrumb mixture.
- Place the coated chicken breasts on the prepared baking sheet.
- Bake for about 20-25 minutes until golden brown and cooked through.
- Remove from oven and spoon marinara sauce over each piece, then add mozzarella cheese on top.
- Return to the oven for an additional 5-7 minutes until the cheese is melty and bubbly.
- Let the chicken rest before serving and garnish with fresh basil.
Notes
For a gluten-free option, substitute breadcrumbs with crushed cornflakes or gluten-free panko. Boneless chicken thighs can also be used for added juiciness.
