Golden, crispy Parmesan-crusted cod fillets made healthier in the air fryer with minimal oil and maximum crunch in just 12 minutes

- 4 cod fillets (6 oz each, fresh or thawed)
- 3/4 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup all-purpose flour
- 2 large eggs
- Olive oil spray
- Lemon wedges for serving
Instructions
- 1. Pat cod fillets completely dry with paper towels. Preheat air fryer to 400°F for 3 minutes.
- 2. Set up breading station with three shallow dishes: flour mixed with pinch of salt and pepper in first dish, beaten eggs in second dish, and Parmesan-panko-spice mixture in third dish.
- 3. Dredge each cod fillet in flour, shaking off excess, then dip in beaten eggs, and finally press firmly into Parmesan mixture to coat all sides.
- 4. Lightly spray air fryer basket with olive oil. Place breaded fillets in single layer without overlapping.
- 5. Spray tops of fillets lightly with olive oil spray. Air fry at 400°F for 6 minutes.
- 6. Carefully flip fillets using spatula, spray lightly with oil again, and cook for additional 6 minutes until golden brown and internal temperature reaches 145°F.
- 7. Remove from air fryer and let rest for 2 minutes. Serve immediately with lemon wedges.
Notes
Store leftovers in airtight container in refrigerator for up to 2 days. Reheat in air fryer at 350°F for 4-5 minutes. Can bread fillets up to 24 hours ahead and refrigerate until ready to cook. Works with other white fish like haddock, halibut, or tilapia.
