Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups sour cream (or Greek yogurt for a healthier option)
  • 1 cup cream of mushroom soup (or homemade)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 tortillas (flour or corn)
  • Fresh cilantro, chopped (optional, for garnish)
  • Jalapeños, sliced (optional)
  • 1 cup diced tomatoes (canned or fresh, for topping)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Then toss in the minced garlic, cooking for another minute until fragrant.
  2. Add the peeled and deveined shrimp to the skillet, seasoned with cumin, chili powder, salt, and pepper. Cook until the shrimp turn pink and are fully cooked, about 5-6 minutes.
  3. Remove the skillet from heat and stir in the sour cream and cream of mushroom soup until the mixture is smooth and well combined.
  4. Preheat your oven to 350°F (175°C). Prepare a 9×13 inch baking dish by lightly greasing it.
  5. Spoon a generous amount of the creamy shrimp mixture into the center of each tortilla, roll tightly, and place seam-side down in the prepared baking dish. Repeat with remaining tortillas and shrimp mixture.
  6. Pour any remaining shrimp mixture over the top of the tortillas and sprinkle shredded cheese generously on top.
  7. Bake in the preheated oven for about 20 minutes, or until the cheese is bubbling and golden brown. Broil for the last 2 minutes for a perfect golden finish.

Notes

Consider using Greek yogurt for a lighter dish or chicken as an alternative protein. Pair with a salad for a complete meal.
