- 2 pounds boneless, skinless chicken breasts
- 8 ounces cream cheese, softened
- 1 packet (1 ounce) ranch seasoning mix
- 1 cup chicken broth
- 4 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- 1. Place chicken breasts in bottom of crock pot in an even layer.
- 2. Sprinkle ranch seasoning evenly over chicken pieces.
- 3. Cut cream cheese into chunks and distribute around chicken.
- 4. Pour chicken broth around edges of chicken.
- 5. Add butter pats and garlic powder across the top.
- 6. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- 7. About 30 minutes before serving, shred chicken with two forks.
- 8. Stir everything together until cream cheese is fully incorporated.
- 9. If sauce is too thin, cook uncovered on high for 20 minutes to thicken.
- 10. Garnish with fresh parsley and serve over rice, pasta, or mashed potatoes.
Notes
Store leftovers in airtight containers in refrigerator for up to 4 days. Freezes well for up to 3 months. Add a splash of chicken broth or milk when reheating to restore creamy consistency. Can substitute chicken thighs for extra juiciness.
