- 3 cloves garlic, minced
- 4 cups potatoes, peeled and diced (Yukon Golds are recommended)
- 4 cups beef broth (homemade or store-bought)
- 1 cup heavy cream (or coconut milk for a dairy-free option)
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
- Optional: 1 cup shredded cheese (cheddar recommended)
Instructions
- Heat the olive oil or butter over medium heat in a large pot or Dutch oven. Add the diced onion and sauté for about 3-4 minutes, or until translucent.
- Add minced garlic and cook for about 1 minute until fragrant.
- Toss in ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
- Add diced potatoes and pour in the beef broth. Bring to a gentle boil.
- Lower the heat, cover, and let it simmer for about 15-20 minutes until the potatoes are fork-tender.
- Pour in the heavy cream and mix thoroughly. Add thyme, parsley, salt, and pepper to taste. Let simmer for another 5-10 minutes.
- If using, stir in the shredded cheese until melted.
Notes
For lighter options, use ground turkey or chicken, and for a vegetarian version, swap the meat with lentils or mushrooms. Store leftovers in the refrigerator for 3-4 days or freeze for up to 3 months.
