- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 6 slices bacon, cut into 1-inch pieces
- 16 oz button or cremini mushrooms, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 4 garlic cloves, minced
- 1 medium onion, diced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 sprigs fresh thyme
- 2 tablespoons fresh parsley, chopped
Instructions
- 1. Cook bacon pieces in a large skillet over medium heat until crispy, about 6-8 minutes. Remove and set aside, leaving 2 tablespoons bacon fat in the skillet.
- 2. Season chicken breasts with salt, pepper, and a light dusting of flour. Add 1 tablespoon olive oil to the skillet and increase heat to medium-high. Sear chicken for 5 minutes per side until golden. Remove and set aside.
- 3. Reduce heat to medium and add remaining olive oil if needed. Sauté diced onion for 3 minutes until translucent, then add garlic and cook for 30 seconds.
- 4. Add sliced mushrooms and cook undisturbed for 2-3 minutes, then stir and continue cooking for 5 more minutes until golden. Season with Italian seasoning and thyme.
- 5. Sprinkle flour over mushrooms and stir, cooking for 1 minute. Gradually add chicken broth while stirring, scraping up browned bits from the bottom of the skillet.
- 6. Simmer for 2 minutes until slightly thickened. Reduce heat to low and stir in heavy cream and Parmesan cheese until smooth.
- 7. Return chicken and any accumulated juices to the skillet. Sprinkle reserved bacon over the top. Cover and simmer for 10 minutes until chicken reaches 165°F internal temperature.
- 8. Remove from heat and let rest for 3 minutes. Garnish with fresh parsley and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of broth or cream to restore sauce consistency. Can be frozen for up to 2 months. Serve over mashed potatoes, rice, or egg noodles to soak up the delicious sauce.
