Instructions
- If you’re using fresh corn, start by shucking the corn and cutting the kernels off the cob. If you’re using frozen corn, simply measure out 4 cups and set it aside. For best results with fresh corn, grill it for a few minutes to enhance the flavor, but make sure to cool it before proceeding.
- In a large bowl, combine the corn kernels with the mayonnaise, Mexican crema (or sour cream), lime juice, and garlic powder. Stir everything together until well mixed.
- Mix in the crumbled cotija cheese, chopped cilantro, chili powder, and season with salt and pepper to your liking.
- Once everything is well combined, taste it and adjust the seasoning as needed.
