- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 2 teaspoons dried thyme
- 2 teaspoons dried parsley
- 1 teaspoon dried basil
- 1 cup chicken broth
- 2 lbs russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- ½ cup milk
- 1 lb baby carrots
- 2 tablespoons butter
- 2 tablespoons brown sugar
Instructions
- Start by preparing the potatoes. Place the peeled and cubed potatoes in a large pot, cover them with cold water, and add a pinch of salt. Bring the pot to a boil and let the potatoes cook for about 15-20 minutes, or until they’re fork-tender.
- While the potatoes are cooking, it’s time to take care of the chicken. Pat the chicken breasts dry with a paper towel, and season them generously with salt, pepper, garlic powder, and onion powder.
- In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the seasoned chicken breasts. Cook them for about 6-7 minutes on each side, or until they’re golden brown and cooked through. When done, remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the chicken broth, scraping up any brown bits left from the chicken. Then, stir in the heavy cream, Dijon mustard, dried thyme, parsley, and basil. Let this mixture simmer for about 3-5 minutes until it thickens slightly.
- While the sauce simmers, go back to those potatoes! Drain them and add the butter, milk, salt, and pepper. Mash everything together until you achieve your desired smoothness.
- Now, for the glazed carrots. In a small saucepan, melt the butter over medium heat. Add the baby carrots, brown sugar, and a pinch of salt and pepper. Stir the mixture, coating the carrots well. Cover and let the carrots cook for about 5-7 minutes, until they’re tender and glazed.
- Return to the chicken dish. Place the chicken back into the skillet with the creamy sauce, allowing it to soak up those fantastic flavors for a minute.
- Everything should be ready now! Plate the creamy herb chicken alongside a generous scoop of mashed potatoes and a heap of glazed carrots. Drizzle the sauce over the chicken for added flavor and presentation.
Notes
For a healthier option, substitute the chicken with tofu or chickpeas, and use coconut cream instead of heavy cream.
