A delightful dessert featuring creamy and luscious mangoes, perfect for hot summer days or gatherings.


Ingredients

  • 4 cups ripe mango, peeled and diced
  • 1 cup coconut milk (full-fat preferred)
  • 1 cup sweetened condensed milk
  • 1 tablespoon fresh lime or lemon juice
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • ½ cup crushed graham crackers (optional)
  • Garnish: mint leaves or extra mango slices

Instructions

  1. Start by peeling and dicing the ripe mangoes.
  2. In a blender or food processor, combine the diced mango with coconut milk, sweetened condensed milk, lemon or lime juice, vanilla extract, and a pinch of salt. Blend until smooth.
  3. Taste the mixture and adjust sweetness or acidity accordingly.
  4. If desired, fold crushed graham crackers into the mixture gently.
  5. Pour the creamy mango mixture into serving cups or a dish. Chill in the refrigerator for at least 2 hours.
  6. When ready to serve, garnish with fresh mint leaves or extra mango slices.

Notes

For a healthier option, substitute sweetened condensed milk with a homemade version using coconut cream and sweetener. Vegan alternatives are also available.
