- 1 stick unsalted butter (can use ghee as a substitution)
- 1 cup heavy cream (substitute with coconut cream for a dairy-free option)
- 2 tablespoons Cajun seasoning (store-bought or homemade)
- 1 tablespoon garlic powder
- 1 onion, diced (green onions work well too)
- 1 bell pepper, diced (red or green for color)
- Salt and pepper to taste
- Chopped parsley or cilantro for garnish (adds a fresh touch)
Instructions
- Start by preparing your chicken. Pat it dry and season both sides generously with salt and Cajun seasoning.
- Next, place the seasoned chicken thighs at the bottom of your crockpot. Add in the diced onion and bell pepper.
- Pour in the chicken broth, keeping the chicken moist while simmering. Place the stick of butter directly on top.
- Cover your crockpot and set it to low for about 6 hours or high for 3 hours.
- Once the cooking time is up, remove the chicken and set it aside. Stir in the heavy cream, and let it simmer for about 15 minutes on high to thicken the sauce.
- Shred the chicken using two forks and return it to the creamy sauce, mixing well to coat every piece.
