Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 can (13.5 oz) coconut milk
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Optional: Red pepper flakes for heat

Instructions

  1. Begin by heating the olive oil in a large skillet over medium heat. Once it’s hot, toss in the chopped onions. Sauté them until they’re soft and translucent, which usually takes about 3-5 minutes.
  2. Next, add the minced garlic and grated ginger. Stir these in for about 30 seconds until beautifully fragrant. If you want a bit of heat, sprinkle in the red pepper flakes.
  3. Raise the heat slightly and add the chicken thighs to the skillet. Season them generously with salt, pepper, curry powder, turmeric, and cumin. Brown the chicken on all sides for about 5-7 minutes.
  4. Pour in the coconut milk, ensuring it fully covers the chicken. Give it a gentle stir, scraping the bottom of the skillet to release any delicious brown bits. Bring it to a gentle simmer. Reduce the heat to low and cover the skillet with a lid. Let it cook for about 15 minutes, or until the chicken is cooked through and tender.
  5. Once the chicken is done, remove it from the skillet. The sauce will thicken as it cools. Taste the sauce and adjust the seasoning with more salt or spices if needed.
  6. Return the chicken to the skillet. Spoon some of that delicious sauce over it. That’s it—simple, quick, and unbelievably delicious!
