  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Optional garnishes: fresh cilantro, pumpkin seeds, or a splash of lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and cook until translucent, about 5-7 minutes.
  2. Add minced garlic and grated ginger, sauté for an additional minute until fragrant.
  3. Stir in red curry paste and cook for 1-2 minutes.
  4. Incorporate pumpkin puree, coconut milk, and broth into the pot. Stir well and bring to a gentle simmer for 15-20 minutes.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth.
  6. Stir in soy sauce and lime juice. Season with salt and pepper to taste.
