A comforting, creamy casserole featuring chicken, broccoli, rice, and gooey cheese.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets, fresh or frozen
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth (or vegetable broth)
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1 cup cream of chicken soup
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Salt, to taste
  • 1 tablespoon olive oil (optional)
  • 1 cup milk (dairy or non-dairy)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, uncooked rice, broccoli florets, chicken broth, cream of chicken soup, milk, garlic powder, onion powder, black pepper, and salt in a large mixing bowl.
  3. Transfer the mixture into a greased casserole dish and spread it evenly.
  4. Bake for about 30-35 minutes.
  5. Sprinkle shredded cheddar cheese over the casserole after about 25 minutes and return it to the oven for 5-10 more minutes.
  6. Cool for about 5 minutes before serving.

Notes

Feel free to add additional vegetables or spices for extra flavor. Can be made ahead and stored in the fridge unbaked.
