  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup cream of chicken soup
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 cup milk
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon garlic powder
  • Optional: 1/2 teaspoon paprika
  • Optional: Chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil or butter in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until translucent and fragrant, about 3-5 minutes.
  3. Add in the uncooked rice, stirring with the onion and garlic for about a minute.
  4. Pour in the chicken broth and cream of chicken soup. Stir well to combine and bring to a gentle boil.
  5. Reduce the heat to low and let the mixture simmer for about 2-3 minutes.
  6. Prepare the broccoli, steaming it for a few minutes if using fresh or thawing frozen broccoli slightly.
  7. Combine the shredded chicken, broccoli, milk, and seasonings in a large mixing bowl.
  8. Mix the rice mixture into the chicken and broccoli mixture, ensuring all ingredients are well incorporated.
  9. Transfer the mixture to a greased baking dish and top with shredded cheddar cheese.
  10. Cover with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.
  11. Allow to cool for a few minutes before serving, and sprinkle with chopped parsley.

Notes

Consider substituting brown rice for added fiber, or using turkey and dairy-free options for lighter versions of the dish.
