Ingredients

  • 3/4 cup long-grain white rice
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. In a large pot, melt butter over medium heat. Add diced onions, carrots, and celery. Sauté for 5-7 minutes until vegetables are softened. Add minced garlic and cook for 1 minute more.
  2. 2. Sprinkle flour over the vegetables and stir constantly for 2 minutes to create a roux. The mixture should become slightly golden.
  3. 3. Gradually pour in chicken broth while whisking constantly to prevent lumps. Add salt, pepper, thyme, and bay leaves. Bring to a gentle simmer.
  4. 4. Add chicken breasts to the pot, ensuring they’re submerged in the liquid. Simmer for 15-20 minutes until chicken reaches an internal temperature of 165°F.
  5. 5. Remove chicken from the pot and set aside to cool slightly. Add rice to the simmering broth and cook for 15-18 minutes until tender.
  6. 6. While rice cooks, shred the chicken using two forks. Return shredded chicken to the pot.
  7. 7. Reduce heat to low and stir in heavy cream. Heat through for 3-4 minutes without boiling. Remove bay leaves.
  8. 8. Taste and adjust seasonings as needed. Garnish with fresh parsley before serving.

Notes

Store leftovers in airtight containers in the refrigerator for up to 4 days. The soup will thicken as it sits; add broth or water when reheating. Can be frozen for up to 3 months, though the texture may change slightly. For best results, freeze without rice and cream, then add fresh when reheating.
