  • 1 pound boneless, skinless chicken breasts
  • 8 ounces fettuccine pasta
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 teaspoon Italian seasoning or fresh basil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, melt 1 tablespoon of butter over medium-high heat and add the chicken. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside to rest.
  3. Add another tablespoon of butter and the minced garlic to the skillet. Cook for about 1 minute until fragrant, then pour in the heavy cream, stirring continuously.
  4. Simmer the cream for 3-4 minutes until it slightly thickens.
  5. Gradually add the grated Parmesan cheese into the cream sauce while stirring to prevent clumping.
  6. Cook the fettuccine in salted boiling water until al dente, then drain and set aside, reserving a half-cup of pasta water.
  7. Slice the cooked chicken into bite-sized pieces. In a large mixing bowl, combine the pasta, chicken, and Alfredo sauce, ensuring everything is well coated.
  8. Transfer the chicken Alfredo mixture into a greased baking dish and top with additional Parmesan. Bake for about 15-20 minutes until bubbly and golden.
  9. Remove from the oven, let cool for a few minutes, then garnish with chopped parsley before serving.

Notes

For a vegetarian option, substitute chicken with sautéed mushrooms or cauliflower florets. For a low-carb version, use spiralized zucchini or cauliflower rice.
