Description

A flavorful chicken salad with tart cranberries and crunchy pecans, perfect for any occasion.

Ingredients

Scale
  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup celery, finely chopped
  • 1 cup red grapes, halved
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, roughly chopped
  • 1/3 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Optional: 1/4 cup green onions, sliced for garnish
  • Optional: Lettuce leaves for serving

Instructions

  1. Start by shredding or dicing your cooked chicken breast into bite-sized pieces.
  2. In a large bowl, combine the diced chicken with chopped celery, halved grapes, dried cranberries, and chopped pecans.
  3. In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and a pinch of salt and pepper.
  4. Pour the dressing over the chicken mixture and gently fold it all together.
  5. Allow the salad to chill in the refrigerator for at least 30 minutes before serving.
  6. When ready to serve, plate the salad in individual servings or serve in a large bowl.

Notes

For healthier alternatives, consider using chickpeas or cooked quinoa instead of chicken, and Greek yogurt instead of mayonnaise.
