- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 ½ cups dried cranberries
- 1 cup white chocolate chips (optional)
- 1 teaspoon orange zest (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Cream the softened butter, granulated sugar, and brown sugar together in a large mixing bowl until light and fluffy, about 3-4 minutes.
- Add in the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- Mix together the flour, baking soda, baking powder, and salt in another bowl, then gradually add it to the wet ingredients until just combined.
- Fold in the dried cranberries and white chocolate chips (if using).
- Drop rounded balls of cookie dough onto the prepared baking sheets, spacing them apart.
- Bake for 12-15 minutes or until the edges are golden. The centers may look underbaked but will continue to cook as they cool.
- Cool on the baking sheets for a few minutes before transferring to wire racks.
Notes
For a dairy-free option, substitute unsalted butter with coconut oil or vegetable shortening. For vegan cookies, replace eggs with flax eggs.
