- 1 pound fresh green beans, trimmed
- 4 slices beef bacon, chopped (or turkey bacon for a leaner option)
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon onion powder
- Salt, to taste
- Black pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- Zest of 1 lemon
- Fresh lemon juice, for drizzling
Instructions
- Begin by rinsing the green beans under cool water. Trim the ends to remove any tough bits.
- In a large skillet, add the chopped bacon over medium heat. Cook until crispy, about 5-7 minutes.
- Once the bacon is cooked, transfer it to a paper towel-lined plate to drain excess grease, leaving 1 tablespoon of bacon fat in the pan.
- Add olive oil to the skillet, turn the heat to medium-high, and toss in the trimmed green beans. Sauté for 3-4 minutes.
- Add minced garlic, red pepper flakes (if using), onion powder, salt, and black pepper. Sauté for another 2-3 minutes until garlic is fragrant.
- Next, sprinkle in the crispy bacon bits, lemon zest, and Parmesan cheese (if using). Stir together for 1-2 more minutes.
- Before serving, drizzle fresh lemon juice over the top.
Notes
Feel free to substitute the bacon type or add cherry tomatoes for more flavor. Pair with seared chicken thighs or a light salad.
