This delightful honey-cinnamon oatmeal bread combines warmth and sweetness, making it perfect for breakfast, brunch, or a cozy snack.

Ingredients

Scale
  • 2 cups rolled oats
  • 2 cups milk (or a dairy-free alternative)
  • 1/2 cup honey
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 2 cups all-purpose flour (or whole wheat for a healthier option)
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or pecans; optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the rolled oats and milk in a large bowl, let sit for about 10 minutes.
  3. Add honey, vegetable oil, and eggs to the oat mixture, and mix well.
  4. Whisk together flour, baking powder, cinnamon, and salt in a separate bowl.
  5. Fold the dry ingredients into the wet oat mixture gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for about 45 minutes, or until a toothpick comes out clean.
  8. Remove from the oven, let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Consider using almond flour for a gluten-free version, and try substituting applesauce for eggs for a vegan option.
