Description

Ingredients

  • 6 large eggs
  • 1 cup spinach, chopped (fresh or frozen)
  • 1 bell pepper, diced (any color)
  • 1 small onion, finely chopped
  • 1 cup grated cheese (cheddar or mozzarella)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin generously with cooking spray or olive oil.
  2. Whisk together the eggs and cottage cheese until well combined.
  3. Add the chopped spinach, diced bell pepper, chopped onion, grated cheese, garlic powder, salt, and pepper into the egg mixture. Stir everything together until mixed.
  4. Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  5. Bake for about 20-25 minutes or until the muffins are puffed and set in the middle.
  6. Remove the muffin tin from the oven and allow the muffins to cool for a few minutes before serving.
