Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 bell pepper (chopped, any color)
  • 1 small onion (diced)
  • 1 cup spinach (fresh or frozen, chopped)
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika or cayenne pepper (optional)
  • Fresh herbs for garnish (like chives or parsley)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Crack open the eggs and add the cottage cheese in a large bowl. Whisk until well combined.
  3. Toss in the chopped bell pepper, diced onion, chopped spinach, garlic powder, salt, black pepper, and paprika. Stir until well mixed.
  4. Grease a baking dish with olive oil or butter and pour the egg mixture into it.
  5. Sprinkle the shredded cheese on top.
  6. Bake in the oven for 30-35 minutes until golden brown and a toothpick comes out clean.
  7. Let it cool for a few minutes before garnishing with fresh herbs.

Notes
