Description

Delicious and flavorful corn ribs slathered in garlic and herb blend, perfect as a side dish or summer barbecue treat.


Ingredients

  • 4 ears of corn, husked and cleaned
  • 4 tablespoons of olive oil
  • 3–4 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of smoked paprika
  • 2 tablespoons of fresh parsley, finely chopped
  • 2 tablespoons of fresh chives, finely chopped
  • Optional: Red pepper flakes for heat

Instructions

  1. Start by preheating your oven to 425°F (220°C).
  2. While your oven or grill heats up, prepare the corn by slicing each ear in half lengthwise.
  3. In a mixing bowl, combine olive oil, minced garlic, salt, black pepper, smoked paprika, chopped parsley, and chives. Stir well.
  4. Brush the garlic mixture generously over the cut sides of the corn.
  5. Arrange the corn halves on a baking sheet, cut side up, or place directly on the grill.
  6. Roast or grill the corn ribs for about 20-25 minutes, turning them occasionally.
  7. Once done, remove from the oven or grill and let them rest.
  8. Serve hot, drizzled with more olive oil and additional herbs if desired.

Notes

For a vegan option, use avocado oil instead of olive oil. Ensure to cut the corn properly for best results.
