Description

A delightful chicken dish featuring juicy breasts coated in a savory Parmesan crust, perfect for weeknight dinners or gatherings.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/2 teaspoon dried Italian herbs
  • Cooking oil (for frying)
  • Fresh parsley (for garnishing)

Instructions

  1. Start by tenderizing the chicken breasts. Place them in a plastic bag or between sheets of plastic wrap and gently pound them to an even thickness, around 1/2 inch.
  2. Prepare your chicken for the buttermilk soak. In a bowl, combine the buttermilk with a pinch of salt, then add the chicken, ensuring it’s fully submerged. Let this marinate for at least 30 minutes.
  3. Set up your dredging stations. In one shallow dish, mix the flour, garlic powder, onion powder, black pepper, salt, paprika, and Italian herbs. In a second bowl, combine the panko breadcrumbs and grated Parmesan cheese.
  4. Remove the chicken from the buttermilk and shake off any excess. Dredge each piece in the seasoned flour, covering it completely. Shake off excess flour.
  5. Coat the flour-dusted chicken in the egg wash, then press it into the Parmesan-panko mixture, ensuring it is well-coated.
  6. Heat about 1/4 inch of oil over medium-high heat until a breadcrumb dropped into the oil sizzles.
  7. Carefully place the coated chicken in the hot oil. Cook for about 4-6 minutes on each side until golden brown and the internal temperature reaches 165°F.
  8. Transfer the chicken to a paper towel-lined plate to drain any excess oil.
  9. Garnish your crispy chicken with fresh parsley and serve hot!

Notes

For gluten-free options, consider using almond flour or gluten-free breadcrumbs. You can also bake the chicken at 400°F for a healthier alternative.
