  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 3 tablespoons adobo sauce (from a can of chipotle peppers)
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 lime
  • Fresh cilantro (for garnish)

Instructions

  1. Begin by prepping the chicken. If you’ve opted for boneless, skinless chicken thighs, trim off any excess fat. Pat them dry with a paper towel to ensure a good sear when cooking.
  2. In a mixing bowl, whisk together olive oil, adobo sauce, chipotle chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Once your marinade is well combined, add the chicken thighs, making sure they’re thoroughly coated. Let the chicken marinate for at least 15 minutes, or up to overnight.
  4. Heat a large skillet over medium-high heat. Add a drizzle of olive oil to the hot pan. Carefully place the marinated chicken into the skillet.
  5. Cook on one side for about 5-6 minutes until you achieve a golden sear.
  6. Flip the chicken over and reduce the heat to medium. Cook for an additional 10-12 minutes or until the internal temperature reaches 165°F.
  7. Once cooked, remove the chicken and allow it to rest for 5 minutes.
  8. Slice the chicken into strips or bite-sized pieces. Squeeze fresh lime juice over the top and garnish with chopped cilantro.

Notes

For a spicier variant, adjust the amount of chipotle sauce and chili powder. Marinate overnight for deeper flavor.
