- 1 can (13.5 oz) of coconut milk (full-fat for creaminess)
- 1 tablespoon honey or maple syrup
- 1 tablespoon lime juice
- Pinch of salt
- Optional: coconut flakes, chopped nuts, or fresh mint leaves for garnish
Instructions
- Prepare the mangoes: Start by peeling and dicing the ripe mangoes into small chunks.
- Blend the ingredients: In a blender, combine the diced mango, coconut milk, honey, lime juice, and a pinch of salt. Blend until smooth.
- Taste test: Dip a spoon into the blended mix and adjust sweetness with honey or lime juice.
- Pour into molds: Carefully pour the mango coconut mixture into popsicle molds, leaving some space at the top.
- Insert sticks: Place popsicle sticks in the center before freezing.
- Freeze: Freeze the molds for a minimum of 4 hours or until solid.
- Enjoy: Run the molds under warm water to loosen popsicles and enjoy!
