Description

A burst of tropical flavors, this coconut lime chicken and rice dish features succulent chicken in a zesty sauce, served over fluffy rice.


Ingredients

  • 1 pound boneless, skinless chicken thighs (or breasts)
  • 1 cup coconut milk
  • 1/4 cup fresh lime juice
  • Zest of 1 lime
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 1 cup uncooked jasmine or basmati rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Start by marinating the chicken. In a large bowl, whisk together the coconut milk, lime juice, lime zest, garlic, ginger, soy sauce, and honey until well combined. Add the chicken pieces, ensuring they’re fully coated. Cover the bowl and let it marinate in the fridge for at least 15 minutes, or up to 2 hours if you have the time.
  2. While the chicken marinates, prepare the rice. In a medium saucepan, heat the olive oil over medium heat. Add the rice and toast it for about 2-3 minutes, stirring frequently until it’s lightly golden.
  3. Once toasted, pour in the chicken broth and a pinch of salt. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes until the rice is tender and the liquid is absorbed.
  4. In the meantime, in a large skillet over medium heat, add the marinated chicken and cook for about 5-7 minutes on each side, or until the chicken is cooked through and golden brown. Pour in the remaining marinade and let it simmer for a few minutes until slightly thickened.
  5. Once everything is ready, fluff the rice with a fork, plate it, and top with the chicken. Drizzle the sauce over the top, sprinkle with fresh cilantro, and serve with lime wedges on the side for an extra zing.

Notes

For a vegetarian version, substitute chicken with firm tofu or tempeh. Use quinoa or cauliflower rice for a lower-carb option.
