Cobb Salad Recipe with Chicken

Description

A classic American salad featuring grilled chicken, crispy bacon, hard-boiled eggs, avocado, blue cheese, and fresh vegetables with homemade red wine vinaigrette


Ingredients

  • 2 large boneless, skinless chicken breasts (about 1.5 pounds)
  • 1 large head romaine lettuce, chopped
  • 8 slices bacon
  • 4 large hard-boiled eggs
  • 2 medium ripe avocados, diced
  • 2 cups cherry tomatoes, halved
  • 1 cup blue cheese, crumbled
  • 1/2 cup red onion, finely diced
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • 3/4 cup extra virgin olive oil (for dressing)
  • 2 tablespoons fresh chives, chopped

Instructions

  1. 1. Season chicken breasts with salt, pepper, and 2 tablespoons olive oil. Grill over medium-high heat for 6-7 minutes per side until internal temperature reaches 165°F. Let rest 5 minutes, then slice.
  2. 2. Cook bacon in a cold skillet over medium heat until crispy, about 8-10 minutes. Transfer to paper towels to drain, then crumble.
  3. 3. Place eggs in a saucepan, cover with cold water by 1 inch. Bring to a boil, remove from heat, cover and let stand 12 minutes. Transfer to ice bath, then peel and chop.
  4. 4. Make the vinaigrette by whisking together red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Slowly drizzle in 3/4 cup olive oil while whisking constantly until emulsified.
  5. 5. Arrange chopped romaine lettuce on a large platter or individual plates.
  6. 6. Top with rows of sliced chicken, crumbled bacon, chopped eggs, diced avocado, halved tomatoes, and crumbled blue cheese.
  7. 7. Sprinkle with diced red onion and fresh chives.
  8. 8. Drizzle with red wine vinaigrette just before serving or serve dressing on the side.

Notes

Store components separately in airtight containers for up to 4 days. Assemble just before serving for best texture. Can substitute blue cheese with feta, goat cheese, or cheddar. For lighter version, reduce bacon and cheese quantities.
