Description

A traditional Southern favorite, this creamy potato salad combines potatoes, eggs, and a unique blend of ingredients for a crowd-pleasing side dish.


Ingredients

  • 3 pounds russet or Yukon gold potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 celery stalks, chopped finely
  • 1 small onion, diced
  • 4 hard-boiled eggs, chopped
  • Salt and black pepper to taste
  • Fresh dill or parsley, chopped (optional)
  • A pinch of sugar (optional)

Instructions

  1. Begin by placing the peeled and cubed potatoes in a large pot. Fill the pot with cold water, ensuring the potatoes are submerged. Add a generous pinch of salt and bring to a boil over medium-high heat. Cook until tender, about 15-20 minutes.
  2. While your potatoes are boiling, prepare the hard-boiled eggs by placing them in a small pot, covering with cold water, and bringing to a boil. Once boiling, remove from heat, cover, and let sit for about 10-12 minutes.
  3. Once the potatoes are cooked, drain and let cool slightly. Finely chop the celery and onion.
  4. In a large mixing bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Mix well until smooth.
  5. Once the potatoes have cooled to room temperature, add them to the mixing bowl along with the chopped celery, onion, and peeled, chopped hard-boiled eggs. Gently fold the ingredients together.
  6. Once combined, sprinkle in the fresh dill or parsley if desired, and give it another gentle fold.
  7. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise or use vegan mayo. For low-carb options, swap potatoes for cauliflower.
