Description

Ingredients

  • 2 pounds ground beef (or ground turkey)
  • 1 cup breadcrumbs (panko or gluten-free)
  • 1/2 cup milk (almond or oat milk)
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped bell pepper
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/4 cup ketchup (or BBQ sauce)
  • 2 tablespoons Worcestershire sauce (or vegan alternative)
  • Salt and pepper, to taste
  • Optional: 1 tablespoon mustard
  • Optional: 1/2 cup shredded cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground beef, breadcrumbs, milk, chopped onion, chopped bell pepper, minced garlic, and eggs in a large bowl.
  3. Add in the ketchup, Worcestershire sauce, salt, pepper, and any optional ingredients.
  4. Shape the mixture into a loaf and place it in a greased 9×5 inch loaf pan.
  5. Pour a little extra ketchup on top for a glaze.
  6. Bake the meatloaf for 60 minutes or until it reaches an internal temperature of 160°F (70°C).
  7. Allow the meatloaf to rest for about 10-15 minutes before slicing.

Notes

Serve with mashed potatoes or steamed vegetables for a complete meal.
