- 1 tablespoon olive oil (or butter for richer flavor)
- 1 medium onion, finely chopped
- 2–3 cloves garlic, minced
- 1/4 cup molasses
- 1/4 cup brown sugar (light or dark, depending on preference)
- 1 tablespoon Dijon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon ground black pepper
- 1 teaspoon salt (or to taste)
- 1 cup vegetable broth (or chicken broth for a deeper flavor)
- Optional: 1-2 tablespoons apple cider vinegar for tang
- Optional: Beef or turkey bacon for a smoky element
Instructions
- Begin by soaking the dried beans overnight in cold water. Rinse them well after soaking.
- Preheat your oven to 300°F (150°C). Heat the olive oil in a large, oven-safe pot over medium heat and add the chopped onion.
- Sauté until the onion is translucent, about 5-7 minutes.
- Stir in the minced garlic and sauté for an additional minute.
- Stir in the molasses, brown sugar, Dijon mustard, smoked paprika, black pepper, and salt.
- Add the soaked beans and vegetable broth to the pot, stirring to coat the beans.
- If using apple cider vinegar, add it now.
- Cover the pot and place it in your preheated oven. Bake for about 90 minutes, stirring every 30 minutes.
- Taste the beans at the 90-minute mark and adjust seasonings as necessary.
- Continue baking uncovered for another 20-30 minutes for a thicker consistency.
